Hyle’s cellar is where the restaurant’s vision becomes glasses of wine. Over seven hundred labels make up a list that crosses styles, regions and winemaking schools, from the great classics to more unusual finds.
The common thread is sensibility rather than geography: wines of balance and depth, able to evolve over time. Alongside international labels, Calabrian wine holds a central place, not as a separate quota but as an equal voice.
Every bottle is another way to read the dishes: to amplify or shift the view, never to overpower it.
